Beet It (3)

I guess things we professed to disliking have uncanny ways of falling into our field of vision. Like this Nigel Slater’s beet root recipes. The root veggie I like but the recipe writer freaks me out, as explained in Beet It (2). In the spirits of raising the profile of the under-rated beet, I braved the author’s picture and scribbles. Both recipes, beet root raita  and fritters, are quite straightforward and palatable substitutes for cucumber and potato respectively.
