If you’re planning to make mazurek, get your mąka krupczatka now. You can use ordinary wheat flour for the short crust base but locals favour mąka krupczatka and it tends to get sold out in the run up to Easter. And if you feel adventurous, substitute half of the butter (for the short crust base) with lard, as suggested by Delia.
